Once upon a time, in a little Village, on a farm down the hill by the dam, there was a family.
The family was a happy family, with a Papa, a Mama and nine children.
Mama and Papa were hard working people who rose every morning before sunrise.
They would go to the orchard filled with lush trees dripping their bounties of ripe peaches,
cherries, and apricots. Just beyond the orchard stood the vineyard with vines of glistening green and red grape clusters.
Each morning they picked the freshest fruit shining with morning dew. The fruit nestled in small crates and loaded onto
the old but serviceable family pickup truck, would be driven to the open-air fruit and vegetable market in the neighboring city.
Mama would remain at the market through the morning selling her fresh wares.
Papa would depart for his day's work constructing new roads through forest land and the country hills.
While Mama and Papa were harvesting the day's produce,
the eldest children would awaken their younger siblings and get them ready for school.
Each day the eldest children would feed the chickens and collect the day's fresh eggs from their coop,
sorting and packaging the eggs for pick up by the food cooperative, which would take them to market.
After breakfast and chores were complete, the children would take the bus to school, not too far away.
Each afternoon, the kids would return from school, greeted by their Mama who had returned from market with fresh food
and produce from the other vendors. The most special treat was fresh falafel, still hot and tasty, from the open market stall.
Each evening, after dinner, was time for homework and still more chores. All the children finished their homework,
the bigger children helping their younger siblings, the middle children helping the youngest.
Mama and Papa would return to the fields to fertilize, weed and perform other routine tasks.
This routine went on for years and years until they started sending the fruits to vendors in the City market.
This freed up Mama's time at home instead of peddling her wares each day. But without Mama going to the market each day,
the children missed their favorite falafel snack after school.
Mama knew how much her children LOVED falafel and how healthy it was for her growing brood.
She mixed and stirred and cooked in her own kitchen until she came up with a recipe that was just right…
with her own flavors and special touch and homemade pita to serve it in.
Word spread of Mama's fabulous pita and falafel. Morning, noon and night, friends and family gathered in Mama's
kitchen just for a taste of this delight. Word spread further, bringing strangers to Mama's door.
Years later, one of Mama's sons traveled far, far away - away from Mama, home and family.
He missed his Mama and Papa, the farm, and he missed the taste of his Mama's cooking.
When he closed his eyes at night, he dreamed of the love and laughter of his childhood home
and the taste of Mama's fabulous falafel.
One day, while breaking bread in a local cafe with his friend, Mama's son spoke of her fabulous falafel
with such enthusiastic description, his friend found HIS mouth watering too. On the spot,
they decided that they would learn from Mama how to make her special pita and falafel delight and share
this delicious treat with everyone who would love it. And this is how Falafel Stop was born…
